The oldest family brewery in the world, founded in 1447 in Rettenberg, Allgäu, has been run by the Zötler family for the twentieth generation. The Zötler brewery produces characteristic, individual and always first-class brand beers, in accordance with the Bavarian purity law and the traditions of the Allgäu region. The Zötler brewery brews a "slow brewing" beer that includes a 4-hour mash program and a two-week bottom fermentation at low temperatures.
The process ends with a six-week maturation in lager tanks at a temperature close to zero. It was at this time that the beer gets its main feature: a surprisingly mild taste and excellent foam.
