The founder of the brewery, Luc Vermeersch, started experimenting in 1997 in his holiday home with a small 30-liter mini-brewery that he had purchased in Finland. Through intensive self-training and making numerous small test batches, his knowledge and interest in brewing grew. In April 2008 in Ruddervoorde, between the cities of Bruges and Roeselare, the De Leite brewery became a fact. The first brewery was installed even before the amateur brewer had finished his course. As the demand for beer continued to grow, the brewery was expanded in December 2011 and grew steadily over the following years. In 2011, Luke had another dream come true.
He brought back 14 220-liter wooden wine barrels from winemaker friends in the Médoc area of France. His love of sour beers was finally able to translate into a "Cuvee" series at his own brewery. The brewery now already has 105 of these barrels installed, as well as eight wooden barrels with capacities ranging from 4,000 to 5,000 liters.
A light, sour ale that is aged for 4 months in oak wine barrels. Initially has a slight citrus bitterness due to the 4 varieties of hops and the subsequent dry hop. The aromatics begin with green apple, white wine and oak, which are also present at the beginning of the sip, then notes of citrus and sour peach develop, and closer to the aftertaste funky notes of cattle yard show up. White wine, vanilla, vinegary acidity and oaky tannins persist in a tart aftertaste that transitions into a winey-fruity one before dissipating.
The Enfant Terriple is used, which is aged with cherries for 6 months: 250 g seedless sour cherries per liter of beer. Part of this blend is also transferred to oak wine barrels, where it gets even more woody sourness and softness over the course of a year. Further blending results in a triple shout of "pur sang." Delicate and refined fruit flavors of red apple, raspberry, cherry, slightly tart, perfectly complemented by notes of Christmas spices - cloves, nutmeg. The aftertaste is dry, long, with many unusual flavors. Medium body and carbonation. A great combination of fruity, tart, funky, woody, herbal notes and a distinct flavor.

Flemish red-brown sour, a blend of brown beers that can mature for over a year in oak barrels and young blonde beers. The aromatics show wine notes, some old oak tannin, sour cherries, ruby port, figs and lambic acidity. The taste is multifaceted, dark tart cherries with sweet red berries at the forefront, from the middle of the palate notes of balsamic vinegar and soft oak appear, also, some raisins and spicy grains around the edges. Medium-bodied. Equally sweet and tart. Moderately dry throughout, velvety and soft.
